Jacques’ Chocolate Chip Macadamia Cookie recipe!

As seen on NBC4’s Weekend Today in New York and CBS Live From the Couch, here is Jacques Torres’ recipe for Chocolate Chip Macadamia Cookies. Jacques recommends dipping them into Fonseca Bin 27 Port Wine!


1 1/8 stick butter

½ tsp. baking powder

¾ cup brown sugar

1 tsp salt

½ cup sugar

1 egg

1 cup cake flour

1 tsp. vanilla

1 cup bread flour

2 cups 60% chocolate discs

½ tsp. baking soda

1 ¼ cup macadamia nuts


(Yields about 28 cookies)

Preheat the oven to 350°F

Have ready 2 cookie sheets lined with parchment paper

In a bowl, stir together the flours, salt, baking powder and baking soda, set aside

In a bow of stand mixer fitted with the paddle, cream the butter and sugars on medium speed until light & fluffy

Add the eggs and vanilla and beat until incorporated

Reduce the speed to low and add the dry ingredients, beating until incorporated

Remove the bowl from the mixer and, using a rubber spatula, fold in the chocolate and the nuts

Using Tablespoons or a cookie scoop, drop heaping, rounded spoonfuls of dough onto the parchment lined sheet pans, leaving adequate space between the cookies

Bake for about 10 min. in a 350°F oven, until lightly golden brown

Remove from the oven, transfer the cookies to wire racks and let cool
